Preheat oven to 400 degrees and line cookie sheet with parchment paper
Make "egg" by combining water and egg replacer. Stir to combine and let sit for 1 minute, until mixture gels.
In a large bowl, stir together the coconut oil, sugar, vanilla and baking powder, until just combined. Next, add in the gelled egg replacer and stir to combine. Fold in the chocolate chunks.
Batter is stiff and you may need to work the chocolate chunks in by hand. Form the dough into golfball sized mounds and place on the parchment lined sheet pan. Dough should yield 13 nice sized cookies.
Bake cookies for 10-12 minutes until just barely set. Cool on a wire rack.
